Does anyone have a really nice coffee cake recipe?
I want to find a good one for Mom. She loves a sweet with her morning coffee and I think she's a little bored with our current rotation.

This one is sort of close. I imagine you could sub other fruit, nuts.

Cranberry Upside-Down Coffee Cake


Ingredients

* 2/3 cup packed brown sugar
* 1/3 cup butter
* 1 1/4 cups cranberries
* 1/2 cup chopped pecans
*
* 1/2 cup butter, room temperature
* 3/4 cup white sugar
* 2 eggs
* 1 teaspoon vanilla extract
* 1 cup sour cream
* 1 1/2 cups all-purpose flour
* 1 1/2 teaspoons baking powder
* 1 teaspoon baking soda
* 1/2 teaspoon ground cinnamon
* 1/4 teaspoon salt


Directions

1. Preheat oven to 350 degrees F (175 degrees C). Wrap the outside of a 9 inch springform pan with aluminum foil to prevent leaking. Sift together the flour, baking powder, baking soda, cinnamon and salt. Set aside.
2. In a saucepan over medium heat, combine brown sugar and 1/3 cup butter. Bring to a boil, then pour into bottom of springform pan. Sprinkle with cranberries and pecans.
3. In a large bowl, cream together the butter and 3/4 cup sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Beat in the flour mixture alternately with the sour cream. Pour batter into prepared pan.
4. Bake in the preheated oven for 60 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool in pan for 10 minutes, then invert onto serving platter and carefully remove pan. Serve warm.

1. I make that exact recipe frequently.
It's delicious. I make them and muffins a lot for Bill's breakfasts through the week. I'll go through them later and post the ones that came out nice. :hi:

I use this recipe but add a can of well drained pineapple to the cake and reduce the milk to about a splash

If I have them I add crushed Macademia's to the topping.


I love pineapple cakes. You can make a lovely quick pineapple coconut bar by using a white cake mix, a can of drained crushed pineapple and three eggs. I add coconut as well. They have the texture and depth of a brownie

18. eoa: when I make the bars, do I just igore the cake mix recipe
add three eggs, the pineapple and some coconut? No oil or other liquid? Baking temp would be 375 for about 40 minutes? Something like that? I went and got the things needed for the recipe and would like to try it! :hi:

I was operating from memory. It's two eggs, a stick of melted butter and the pineapple, coconut and cake mix. Drain the Pineapple pretty well but you don't want it totally dry. I usually use half a bag of coconut but I have added up to a full bag. The batter will be pretty thick as These are pretty rich. I bake at 350 and check with a toothpick at about 25-30 minutes.

23. These are my daughters most favorite goodie
Hope it came out for you. I usually make them in a 8 by 11 pan so they are on the thin side. The recipe seems quite adaptable too...

4. Yours sounds good. Here's an easy peasy one that is a Betty Crocker classic.
Streusel Coffee Cake



Cinnamon Streusel
1/3 cup Original Bisquick® mix
1/3 cup packed brown sugar
1/2 teaspoon ground cinnamon
2 tablespoons firm butter or margarine

Coffee Cake
2 cups Original Bisquick® mix
2/3 cup milk or water
2 tablespoons sugar
1 egg


1. Heat oven to 375°F. Grease 9-inch round pan. In small bowl, stir streusel ingredients until crumbly; set aside.

2. In medium bowl, mix coffee cake ingredients until blended. Spread in pan. Sprinkle with streusel.

3. Bake 18 to 22 minutes or until golden brown.

High Altitude (3500-6500 ft): Heat oven to 425°F. Use 9-inch square pan. Stir 2 tablespoons Gold Medal® all-purpose flour into the 2 cups Bisquick® mix. Increase milk to 3/4 cup. Bake 15 to 20 minutes.


Many folks rated this quite high at the link and some added variations, like yogurt.

This is the only coffee cake I've ever made from a Bisquick mix, but it's simple and tasty. Of course, REAL bakers wouldn't use Bisquick, but this is a quickie ;-)

10. This one's pretty basic...
no fruit or nuts, but it is dee-licious! I usually double the recipe. Freezes well, too. :)

Streusel Filled Coffee Cake

Mix filling and topping together with a fork before mixing streusel

Filling and Topping:
½ cup brown sugar
2 tsp cinnamon
2 TBSP flour
2 TBSP margarine or butter

Streusel:
1½ cup flour
3 tsp baking powder
¼ tsp salt
¾ cup sugar

¼ cup shortening

1 egg
½ cup milk

Mix dry ingredients, cut in shortening.

Blend in well beaten egg mixed with milk.

Spread over half of the batter in greased and floured 8x8 pan.

Then put half of the filling over this.

Add the other half of the batter.

Sprinkle remaining filling on top.

Bake 25 to 30 minutes at 375°.

19. Is "strudel" you're thinking about?
It's generally apple, although it's made with other fillings as well.

Mmmmm... peach strudel


I was thinking about you this morning when I pulled my sd starter out of the fridge - how's that new starter coming along? Have you baked with it yet?

I can't tell you how different this incarnation is. He even smells more lively.

But since I've never gotten this far before, lol, what is his feeding schedule once he's in the frig? :hi:

25. Once a week is often recommended
Especially if you're baking on a regular weekly schedule. If it's a strong, healthy starter then it can go longer, but it might take an extra feeding to get it ready for baking. Nontheless, when you get ready to bake, you'll need to take it out of the fridge and feed it till it's fully active (double in volume), and while it's at its fully active state, use some of it for your bread and feed and refrigerate the remainder.

I'm looking forward to hearing how your first loaf comes out!

14. You have to be really FAST around here.
I went with this recipe this morning because as usual, I'm running late and 25 minutes is a bargain. It took about 10 minutes to put together. :thumbsup:

By the time I remembered to take a snapshot, there was already a piece gone MIA. We have contractors here today. I was about to go looking for the one that looked guilty. lol



I threw some blue berries into the batter and added a little walnut dust into the topping. The batter needed a little extra milk to be batter (even in the rain, it's arid here, go figure) but the baking time was on the nose.

11. Here's one that I've made several times. It's super simple to make and tastes great.
It's also very easy to make additions to the batter and topping, such as nuts, dried fruits, etc.

Neighbour House Coffee Cake presented by The Neighbour House Bed & Breakfast
1-1/2 sticks of butter
1 lb. light brown sugar (2 ¼ C.)
3 cup flour
1-1/2 tsp. baking soda
1-1/2 tsp. cinnamon
Combine the above ingredients (reserve 1 cup for crumb topping). Then add:
2 eggs
1-1/2 cup of sour milk or butter milk
1 tsp. vanilla
Place in a 9x13" greased pan. Sprinkle crumbs on top. Bake at 350 for 45-60 minutes.

15. Well, all I can say...
my family will be getting some great breakfast cakes. Everyone has been sick and I have been the care taker so I haven't been online that much. This board is my favorite as well as my family's favorite one also. We no longer have, "If it's Tuesday, it must be _____ day."

28. I've always used fresh
but I imagine if you macerate the dried ones in something tasty like a liquor or some OJ they would probably work. Let us know if you try it.

It really is a good coffee cake. :hi:

31. I tried this yesterday
with blueberries my husband had picked last spring.

It was very well received. My son told me it looked and tasted like something you would get in a high-end restaurant. I have not tried it, as I a not fond of blueberries, but everyone else in this house loved it.
