How to cook purple potatoes?

How to cook purple potatoes?
I never used them before but received them in my organic veggies delivery. Today I am making beef stew, can I add these potatoes in the stew? Should I boil them alone or roast them? I don't have a clue what to do. Any ideas I would so appreciate.

I've made them mashed and have used them in a salad. I don't know if my mind is just playing tricks on me but I thought they had a slight moldy taste. I tried several times with different batches so I know it wasn't the potatoes. I don't bother with them anymore but I have seen a wonderful recipe for a blue potato salad with blue cheese dressing



Start here and add little grape tomatoes and some crumbled bacon

I had enough regular potatoes for the stew. I will try the purple potato salad this weekend with some type of fish or poultry. I did cut an end of one - looked like a beet to me. I know this sounds gross - but does pee turned red like beets? Interesting potato. I googled some recipes, some people say they turn white after cooking and than there are pictures of purple mash potatoes. I like the potato salad thought.

5. Um, no worries there.
The pigmentation in purple potatoes doesn't produce the same effect as beets do on the human body. They won't discolor the cooking water to the extent that beets do, either.

6. I have not cooked purple potatoes yet,
but years ago, when I had my organic garden I'd always choose one new "interesting" vegetable to grow for the season, and one year I choose purple beans.

They were beautiful, and I took numerous photos, but much to my surprise and dismay, when you cook them (Im sure you ALL know this), they lose that wonderful purple color. I didn't know! :blush: :rofl: <<<< well now anyway!

7. The pigmentation in purple potatoes is more heat stable.
They stay more or less purple, although the color does dull quite a bit.
