customers feel the need to supplement the server's income just so they can survive.

I'd as soon be done with all tipping and pay what the meal/service legitimately costs, to ensure the worker gets a decent wage. But that flies in the face of capitalist greed -- "No one will come here if they have to pay what it really costs," and "How will I meet such a larger payroll?" -- and doesn't leave the onus of screwing the worker in the hands of the befuddled client.
