IMO, good Blue dressing, needs a " balancer" for lack of a better term. What Italian? Do you use?

(8,982 posts)While taking Forest Technology continuing Ed classes at Clemson University, a requirement of faculty in my job, I had the treat of the world famous Blue Cheese made by students in their Agriculture Dairy
Curriculum, and the salad dressing made with it.
Never veered away from Blue Cheese.after.
If never gets a chance visit Clemson ya gotta shoo at the Dairy Store and purchase a huge chuck.
And their ice cream

I really like blue cheese dressing but not that much.

(8,982 posts)We had a New Main Street Diner just open here. Stopped for wings the other day, first visit, after the Dog Bakery run.
THEY MAKE HOMEMADE Blue Cheese. Now I gotta avoid town😉
And Penn State is my collegess arch rival in TimberSports Collegiant competition. We beat em a lot! And got to visit when they hosted the rotating event. Great place there.

Probably a good thing I only took continuing ed classes there for high tech Forestry Technology equipment.
I got my degree from a college that did not have access to ice cream and blue cheese.
My heart and butt size would not have survived.

(27,893 posts)I know there are two sides to the debate about the original Caesar salad, but I come down firmly on the no anchovy side. I make Caesar salads at home pretty often and I do my own dressing with the one minute egg and all.
Now, granted, I can't eat most fish and I can barely stand the taste of the few kinds that don't make me physically ill, but even with that said, I don't know why anyone would want to drown out the taste of a nice, fresh salad by adding a fishy element.

(25,909 posts)Blue cheese and Catalina. French or Russian can be substituted for the French. The blue cheese is better if you toss in a few chunks of Blue Cheese or Feta. Put this on top of some nice Ice Berg or Romaine lettuce with plenty of crunchy White chunks. If you have them, a couple of slices of cucumber and/or radish are a nice touch. Throw in a piece of Deli Swirl Rye bread with Sweet Cream Butter.

Olive oil and any combination of these: red wine vinegar, white wine vinegar, balsamic vinegar, apple cider vinegar, lemon juice.
Then a good shaking of Morton's seasoned salt.
I used to add a grind or two of Trader Joe's lemon pepper, but they discontinued it, drat them.

Usually I just whip up my own oil and vinegar dressing
I lost my appetite for regular ranch after eating pizza with my husband's family and everybody dunked their pizza in ranch dressing. It's a Texas thing.

I like Marie's Coleslaw, Thousand Island and Ranch. But I like other dressings, but I just don't buy more.
I don't care for Kraft and those other salty ones.

Obviously, I like the creamy dressings. Caesar dressing is nice, too. Can't do anything with a vinaigrette. I'm just not on for it.
