I got a nice wild-caught salmon filet for only $4.50. Cut it in half and put a sauce of dill/yogurt/garlic powder, lemon salt, lemon pepper and ground dried porcini mushrooms on it. Seved with peas cooked with mushrooms sauteed in butter, thyme. a little Celtic sea salt and pepper.
I usually don't do desserts, but baked some chocolate chip cookies.

My family couldn't get together this Easter due to a myriad of reasons. We dined at our neighbors for lunch on ham, corn-on-the-cob, my BBQ beans, deviled eggs, and bread. We had key lime pie and a wonderful peanut butter/chocolate bar cookie. There were lots of small children so egg finding in the misty rain was a must.
Went home, took a nap, read a book.

picked one or two dishes to make so nobody was overwhelmed with the cooking. The menu:
Ham Encrusted with Mustard and Tarragon served with a Pineapple, Tarragon and Spring Onion Salsa Delmonico Potatoes Sauteed Spring Vegetables (Asparagus, snow peas & radishes) Balsamic Glazed Carrots Buttermilk Dill Biscuits a variation of English Trifle
It sounds pretty ambitious, but it wasn't all that difficult. Everything turned out really good.

DH does a nice job with his traditional brown sugar, cinnamon and cloves, but I may be able to talk him into a little variety.

1/4 C. French mustard with seeds 1/4 C. chopped tarragon 1/4 C. chopped parsley 2 cloves garlic, crushed
You just rub and press it onto the skin of the ham and bake as usual.

SparklyJr wasn't expected but her plans changed at the last minute. She was here with her boyfriend. StinkyJr and Mr and Mrs. StinkyJr2 were all elsewhere.
Last minute grocery surfing netted the following:
Artichokes (my personal nivana du jour) Spiral sliced ham Grilled Mahi Mahi Grilled asparagus Baked spuds Grilled red peppers (so sweet they could have been dessert)
The only leftovers are some red peppers (planned - we'll use it to make pasta later this week), a baked spud (SparklyJr will make a lunch of that) and some ham (which I will have for supper tonight).

at his restaurant. We did finally roast chicken and veggies late last evening, which were yummy. I haven't been feeling well, so I've been a slacker and keeping quiet. Even the cats were mellow yesterday, so it was lovely. :)

Today will be a Quorn patty, the last of the potage Parmentier, and some mixed veggies.
Tomorrow will be seafood salad.

We finally made it to that new restaurant we've been wanting to go to. I thought of you all when I ordered the Dungeness Crab Crepes in alfredo sauce with roasted Asparagus. Full of crab and the asparagus was lightly smoked which was wonderful. We threw caution to the wind and all ordered sides of their house bacon which was thick and full flavored. I even had a Mimosa :wow: For 3 bucks, how could I turn one down? The SO had Challah french toast which was disappointing only because you can't get "real" Challah in Seattle. But it was a generous portion and they used real maple syrup. The kid had a Dutch Baby which was something I would never order again. They made and served it in a small cast iron skillet which retained too much heat and by the time she was done with it the bottom had burned a bit. it also didn't fall in the middle like my home made ones do...this was more like a thick pancake. The fresh fruit was nice though.
I'm still going to go for dinner though as I'm just too curious about their coffee crusted wild boar.
We also went out the night before for our 24th anniversary. We went for Greek food to another new to us restaurant. I downed a bottle of Retsina by myself so...I'm not remembering the food except it was all good. We did have a creme carmel with roasted figs for dessert which was to die for!
I'm back on my food plan 100% today though and despite the excess in food and drink this past week I still lost that pound for the week.
