You never empty the pot or wash it. You just add water, beans, some duck confit, a sausage or two, a piece of jambon, and keep it simmering. Even after a century, molecules of the original cassoulet are still there in every bowl you serve. It just sits there at the back of the stove, ready to serve.
It's always the original recipe. It's always ready for anyone who walks in the door.

I guess it is too late to throw up, it having been a few years since I was in France.

That's my theory about eating in foreign places. Usually it works out OK.

I believe it was the same person who kept fussing about there not being enough hamberders.
