With shortages of meat, consider dried pinto beans made into refried beans

Below are the directions for making refried beans in my instant pot. Directions for yours may differ.

2 cups of dried pinto beans
7 cups water
1 large onion peeled and quartered
1 tsp salt

Peel, quarter large onion and add to pot
Add 7 cups water
Add 1 tsp salt
Rinse the beans and pick out stones and bad beans, place in quick pot

Install cover, custom set time to 45 minutes and pressure to maximum. After done cooking, turn off quick cooker and let pressure dissipate on its own. Reserve 1 cup of bean broth and using colander, drain the beans and onions. Set aside beans and onions.

2 Tbs olive oil
2 tsp minced garlic
1 tsp salt
1/2 tsp ground cumin
1/4 tsp oregano

In large skillet on stove top, heat oil using medium heat. Add garlic and saute. Add beans and onions, 1/2 cup of reserved bean broth, salt, cumin and oregano. Mix well. Cook gently while smashing bean mixture using fork or potato masher. Continue stirring and mashing mixture till you get the consistency of mashed potatoes. Add more bean both if needed.

Refried Bean Roll-Ups

2 cups refried beans
1/2 cup salsa
1/2 tsp chili powder
1 package of 8 tortillas; 8 inch
1 cup shredded lettuce
1/2 cup shredded cheese

Mix beans, salsa and chili powder in 1 quart saucepan. Heat over medium heat, while stirring occasional, until warm.
Spoon about 1/4 cup of bean mixture onto center of each tortilla. Top with lettuce and cheese. Fold over sides and ends.

Instead of tortillas, I've made sandwiches with the above using bread.

My cupboard could never fit anything bulky! I've got a twelve pack of aseptic Horizon Milk and that is about as bulky as it gets!

They don't even have my favorite staple, Luck's Pinto Beans. To try to buy those online, Amazon was the one place that had them and with shipping, they worked out to about $5 a can. I'm not going to starve, but I am having to be creative, and eat much less than usual. Without pinto beans, I don't have my staple "go to" sustenance food. I have been really weak since about mid-April.

For my plant based diet. Since February it’s been difficult to find beans. They are an excellent source of protein.

Although I soak my dried beans for 24 hours, rinse and then start cooking. Makes em less gassy.

I am not a vegetarian, but I can easily go without meat at least five days per week. Seafood is my preferred "meat" but it's expensive, so chicken is next on the list.

Dried beans have a very long shelf life when properly stored and using a quick pot or pressure cooker to cook them eliminates soaking overnight and simmering on the stove top or in a slow cooker for a long time.

For my birthday!



But I’m gonna slow cook them whole, and soupy, with ham, and some buttered cornbread to sop up the juice. For the side, I’m gonna make a mess of greens with some sliced red onion, and warm honey mustard vinaigrette.

For dessert, I’m gonna make a strawberry shortcake (no whipped cream, extra berries).

Was a staple growing up. Mom made them almost every day.

My Abuelita (grandmother) used to make corn tortillas from scratch....and I do mean SCRATCH. No masa for her, she milled the corn herself.....My GOD those were absolute heaven to eat!

They take three minutes to cook, cost less than a buck for a very filling serving, are reasonably healthy and balanced and only one pan to clean.
