I never saw the movie, but always sort of wanted to (prior to the increasing controversy), because this song always made me smile as a child. My understanding is the "vernacular" speech was a large part of the stereotype that many/most found offensive. Having not seen the movie, I can only assume there were scenes more pronounced than this or language far more overt: (?)

The star who portrayed Uncle Remus was Jimmy Baskette, a former Broadway musical actor who played with Louis Armstrong and in productions with the great Bill Robinson. Baskette was the first black male performer to receive an Oscar, receiving an honorary Oscar for his Uncle Remus portrayal in 1946. It seems sad his most famous portrayal ended in controversy. He was a talented singer, actor and musician. Sort of ironic that Hattie McDanel, the first African American woman to win an Oscar (Mammy in Gone With the Wind) in 1939 likewise suffered from the controversy of that portrayal.

There’s nothing unseemly, let alone racist, about it. Great music, fun story, well imagined attraction. However, if it helps even a little bit in the struggle against institutional racism, this change is the smallest sacrifice I can make. I’ll be sad to see it go but I’m excited to see what they do with the revamp. Provided I ever make it back there, something that seems increasingly unlikely in the near future.

I had no idea that they were seriously considering it. I'll miss Splash Mountain but if there's one constant about Disney, it's change- and I'm sure that they'll do a good job with it. I'll just kind of miss it.
