(3,370 posts)My favorite is a very simple dessert. It is strawberries and blueberries with homemade whipped cream. Sometimes, I like to add either a little bit of pound cake or angel food cake.
Sadly, I am lactose intolerant, so any time I indulge, I pay for it. lol Dairy substitutes just don't do it for me when it comes to homemade whipped cream.

(3,166 posts)I recently bought a KitchenAid stand mixer, and one of the things I wanted to do was make homemade whipped cream. Ive seen them do it on the Food Network for years! I was surprised at how easy it is, and it is SO good! I doubt that Ill ever eat Cool Whip again 😎

(7,754 posts)sorta time consuming. She used a real pie crust and cooked the coconut, pineapple, cream, sugar, eggs, etc. on the stove on very low heat for a long time. Not an easy recipe but one of the most delicious things you will ever eat!!

(65,013 posts)Honestly, I have a hard time saying I've got a favorite.
The most amazing one I've ever had was a Grand Mariner soufflé at Le Francais when it was a 5 star under Jean Banchet.
Comes to table, and looks like a biscuit in a ramekin. Dessert waiter cuts a slit and pours heavy cream into it.
The soufflé exploded magnificently into a perfect little cake. It rose more than an inch above the edge of the ramekin and had a perfect crown shape!
It was fantastic and the presentation was outstanding.
But, as to every day (or week) desserts, I can't say I have a fave.

(10,303 posts)But... Gotta have something on top. My granddad always called it "flop" but it was actually "Dream Topping" (comes in a packet, mixed with milk). Nearest thing in USA would be "Cool Whip"... and it's an excellent substitute IMO. So Apple Pie with Flop. Good tasting (to me) and good find sentimental memories too.

Does anybody else think I have a problem, besides me?
I'm sitting here writing about chocolate while there's a fire happening about two miles from my house. Planes are flying overhead. And I'm trying to decide whether I should eat the apple pie that was just baked, or go have ice cream with chocolate on it.

(9,353 posts)You have to poach the meringue clouds, make a crème anglaise, wait for everything to cool, assemble it and only then, make your caramel to drizzle of the top.
Thats why I prefer to order it in restaurants.
Sadly, hard to find here in the states.

2 baking sheets lined with parchment paper
Pastry bag with 1/2 inch round tip
Ladyfingers
5 large eggs
2/3 cup sugar - divided.
1 teaspoon Vanilla extract
1 cup cake flour
1/4 teaspoon salt
1/4 teaspoon cream of tartar
1/3 powdered sugar
2 bowls - separate eggs while still cold. Yolks in one bowl. Whites the other. Cover each w/ plastic wrap and allow to reach room temperature. Takes about 30 minutes.
Electric mixer: Beat yolks and slowly pour 1/3 cup sugar into yolks on high until thick and light yellow.
Add vanilla, beat a minute to mix throughout.
Mix flour and salt together. Sift over yolk mixture. Do Not incorporate. Just allow to rest on top at this time.
Beat egg whites with cream of tartar, until soft peaks form. Then add remaining 1/3 cup sugar and mix until you get stiff peaks.
Now fold egg white mixture into yolk/flour mixture 1/3 at a time. Make sure to incorporate fully.
Fill pastry bag.
Pipe out 3 inch lines of cookie mixture onto parchment paper. Keep the mixture about 1 inch apart. Fill up both baking sheets.
Sift/lightly sprinkle powdered sugar over your ladyfinger streams.
Bake 8 minutes.
Remove from oven and lift parchment with cookies to wire rack to cool a minute. Then remove cookies from parchment paper and place on another rack to finish cooling. Longer they stay on the parchment paper the more likely they will stick and break when trying to move.
Forget about the ladyfingers for now.
Filling
The yolks of 4 large eggs
1/2 cup sugar divided
3/4 heavy cream
1 cup mascarpone
1 tablespoon orange infused honey
Coffee/liquor blend
Shallow bowl
2 cups espresso
2 tablespoons rum or rum extract - I use rum with coconut.
Blend well. Set aside.
Gather 2 tablespoons unsweetened cocoa powder.
You'll need at least 24 ladyfingers.
Back to filling
2 bowls needed
Mix egg yolks with 1/4 sugar until volume triples in size.
Mix heavy cream with remaining sugar until firm but not stiff peaks form. Mix in mascarpone until mixture is soft and spreadable.
Fold yolk mixture into mascarpone mix.
Layering your Tiramisu
Using a 2 quart baking dish, sift 1 tablespoon of cocoa over bottom of dish. Cover all the bottom.
Lightly dip a ladyfinger into espresso/rum mixture.
One ladyfinger at a time, dip into blend and arrange on bottom of baking dish on top of cocoa. Ladyfingers should be placed round side up.
Once bottom is covered with ladyfingers, spread 1/2 of your filling over cookies.
Repeat process with ladyfingers/espresso blend and layer on top of filling.
Spread remaining half of filling over top.
Sift last tablespoon of cocoa over filling.
Cover with plastic and chill.
24 hours is best for full flavor blend but 4-6 hours works too.
Can slice or scoop to serve.

(2,199 posts)and my Blackberry patch just produced a good gallon of berries yesterday and I will be in hog heaven tomorrow when they go into a pie.....plus I will be picking more berries in the morning and our blueberries are about ready too. We got about 2-3 gallons of mull berries 2 weeks ago. Are strawberries were picked, eaten and frozen about 3 weeks ago. Now to deal with all the squash, zucchini, tomatoes, green beans and peppers our garden is pushing out......

- Strawberry shortcake, on real shortcakes (I make mine with Bisquick - don't judge). It isn't strawberry shortcake if you put it on angel food cake. Then it's just strawberry angel food cake.

It changed slightly over the years but it was a spicy cinnamony rich dense pot de Creme usually with a Chipotle creme floated on top and often served with a spicy ginger cookie. It allowed me to eat my favorite dessert in my favorite Desert - the Sonoran.

just for today, my sister (damn her) introduced me to a new thing from Fry's grocery stores - sour cream angel food cake. you can just sit in your car and eat most of one with your hands after you finish shopping.
