Today is National Hotdog Day. Don't ruin it be doing these two things;

1. Listening to Trump talk, ignore that corrupt idiot.

2. Putting catchup on a hotdog. On all fairness that should warrant 10 lashes on the ass. USE MUSTARD, the only true compliment to hotdogs.

Maybe here it’s meant as a joke, but I’ve known people who are passionate about it, and very serious. And the rules are usually the same...you can’t put ketchup on a hot dog, but you must put it on your fries. You can’t put pineapple on a pizza. Burritos should never contain rice. Some people seem to feel a need to control other people’s food. I just think it’s weird.

But I can certainly tell you one thing, if I am caught eating a pizza with pineapple on it, then I most likely would have been denied any food or other nourishment for a long time and would be famished enough to eat a pizza that has pineapple on it, cause if there is one thing I dislike more than catchup on a hot dog, is pineapple on pizza.

Wed Jul 22, 2020, 01:30 PM
Jul 2020

...is by far the most perplexing.

Hot dogs are naturally salty; ketchup is naturally sweet. The concept of mixing sweet with salty has long been a desirable one. What else would explain the popularity of Reese’s Cups, and who doesn’t love them?

Don’t get me wrong; mustard is a fine condiment as well. But mustard alone on a hot dog is not very appealing to me. You’re just add additional spice to salt, without any sort of sweet offset to it.

People who insist that ketchup can’t be put on hotdogs fall into the same category as people who insist that iced tea must be drunk unsweetened. And let’s be honest, unsweetened ice tea has a more proper name: dirty pond water.

So yes, I will enjoy my hot dog.

With ketchup.

"Juicy pork tenderloin cut into medallions and sauteed in a rich port wine sauce is a dinner that can be made quickly on a weekday or used for a special weekend treat. The skillet potatoes are crisp and golden and take only minutes to make.

"Ketchup in your sauce!" was my surprised comment when I saw famed television chef Jacques Pepin prepare this pork recipe. "Sure, ketchup or a thick tomato sauce has been used in French cooking for many years. It gives just the right amount of sweet and savory flavor and texture," he said with a smile. I have adapted his recipe for this quick dinner."...

I have since been to England and Ireland a few times and found that malt vinegar with chips is the norm there. They have the best Fish and Chips and the malt vinegar is the perfect complement. I can never eat chips with ketchup again.

My youngest puts ketchup on his hot dogs - I have no idea where he got that from.

However, to each his own.

You seem to understand things about the prep of Italian food that most people, even of Italian ancestry don’t. That being said, bologna is an approximation of mortadella that works with the homogenized American tastebuds, Mortadella comes off as too fatty for a lot of people, bologna successfully hides the fat in basically super ground-up meat.

A lot of food that we eat as “cultural” food is a watered down version of what one would encounter if a person eat in the country of origin of that food. The watering down make it more marketable. For example, I really like spaghetti, but I have a real hard time with spaghetti that is made in Italy, the texture and after taste just doesn’t work for me, I am so used to the Americanized version. Our food is a mixture of many cultural foods, but in pretty much every case, a dish loses the pure authenticity of the country cultures that influenced it.

Thu Jul 23, 2020, 08:35 PM

Poor execution. Mortadella, prosciutto, bresoala...all of them are sliced paper thin - they are INTENSE. Average slice of bologna is about 1/16 of an inch and people slap a couple of slices.

Mortadella is a force meat, ground very fine and very cold. Only good cuts of pork are used. A bit of tripe is added for binding. The fat is the stuff as lardo and is blanched first. It is slightly unctuous and delicious. Peppercorn and pistachio add a bit of the exotic when you bite into a piece. The other seasoning that is a major player is mace, almost nutmeg but not quite.

Bologna on the other hand is emulsified. Meat and fat are whipped into a suspension. Corn syrup and powdered milk are added to help. Beef Heart and other inferior cuts are often added.

I consider it junkie food. I haven't eaten it in over 40 years.

I like hot dogs cooked on the grill with just yellow mustard and raw onions. That's it.

Then I was in Chicago and I thought "when in Rome" and ordered a Chicago Hot Dog which pretty much comes with everything but the kitchen sink. It was delicious! I can't wait to go back and try it again. It seems like the few places outside Chicago that offered Chicago dogs didn't quite measure up. It's kind of like Philadelphia Cheesesteaks - you have to go to Philly to get a good one.

At home, I just go the lazy way and use canned chili with no beans and ketchup and mustard sometimes too, if I feel like it. I prefer ketchup on my hot dogs and mustard on cold cuts sandwiches or subs. But, yes, I agree. Chili and slaw on a hotdog is delightful, imo. On hamburgers too, it is great to have chili and slaw. I love hamburgers the same way, unless I am just in the mood for the standard tomatoes. Either way, I reach for chili whenever I can for both hotdogs and hamburgers, even with tomatoes.

I just mad a batch of incredible Ramen. 2 important ingredients in the stock? Pig and chicken feet.

And in France I’ve enjoyed Andouillette. Pigs rectum stuffed with the large intestine. Granted, it has some funk. But if you get by that the flavor and texture is incredible.

President Obama tells Anthony Bourdain like it is: Ketchup is never ok on a hot dog

Given the chance to break bread with President Obama, what would you ask the leader of the free world? Easy, says chef and TV food personality Anthony Bourdain:

"I said 'Look, Mr. President, as a Chicagoan, as a true Chicagoan, is it ever acceptable to put ketchup on a hot dog?' And I mean, anybody else, or anyone running for office, would say 'Well, you know to each their own …' He said, 'No. Never.' After the age of 8 he said, after that an intervention is required. And I agree. I think there is a time and a place for ketchup and I don't think the hot dog is one of them. That's just my opinion."

I only use ketchup on fries, and would rather use A-1 or Heintz 57 sauce.
But, I don't have any attitude about someone else liking it.
Well, except my cousin who put it on turkey at Thanksgiving!

I prefer a game where a hitter has to play a position on defense, not just come to bat, and if a pitcher throws at a guy, he had better ask not to be sent up to bat. NL pitchers are tougher, IMO, because when they throw at a guy, they accept that they will face retribution.

but the street vendor had a heavy hand with the craut and I didn’t have the sense to remove some of it. For me, it created too much of an overwhelming taste, maybe a little with mustard would have been ok.

Roll the hotdog up in the tortilla, bake in oven until tortilla is golden on the edges. Might need a toothpick to keep it closed while cooking. Also might want to give the dog a quick zap in the microwave to heat it a bit.

Then again, I'm no big fan of ketchup either. If anything belongs on a hot dog (and I think the best hot dogs are best naked as the day god made them) it's chili and/or cheese.

But that's just me. You all do you all

I wasn't a big fan of regular hot dogs but they taste about the same or better. I put chili & cheese on top. I still eat cheese & dairy. My goal is to eat less meat & dairy due to environmental problems caused by factory farming in the US & UK. I still sometimes eat fish.

I had a couple for lunch with ketchup.

Then for supper, I had a couple of beer brats, boiled in beer, and added ketchup.

DELICIOUS.

I do make my own ketchup, though. I use a copycat recipe for Heinz and cut the sugar in half. It makes for a better condiment.
