1.5" thick filets, pan seared in butter & bacon fat with caramelized onions & shiitake mushrooms. Then, a red wine reduction in the same pan. Slice the beef, and into a 260° oven until medium.
Same oils to sear scallops, add lemon, white wine & seasoning until hot on the inside.
Sides are steamed asparagus and an Alfredo scalloped potato.
I think she'll be pleased with dinner.
