When fleeing isn't possible, then seek cover or concealment. Cover provides you with protection from gunfire and also hides you while concealment hides you but does not provide protection from gunfire (a stack of empty cardboard boxes).


I know where the exits are in the local stores I shop at plus where they are at Lowes, Home Depot, Walmart, Kohl's, Target, Menards and Tractor Supply stores located in nearby towns. If I'm at a place that I'm not already familiar with, time permitting, I'll find where the exits are first.
