Cantley pudding: a cranberry Christmas Pudding with not much sugar.

You pour the sugar buttery sauce over the Pudding and it mixes with the sour cranberries in your mouth..an explosion of goodness. This is my family's favorite. Merry Christmas and a Happy New Year to the DU. Applegrove

Cantley Pudding


1 1/3 cup flour

1 tsp baking soda

1/2 tsp salt

1/2 cup molasses

1/3 cup boiling water

2 cups fresh cranberries

Mix flour, soda and salt

Add molasses then add the boiling water. Mix.

Add cranberries and mix.

Put into microwaveable round bundt dish like in photos below. Or whatever works for you.

Cover with cling film, so minimal steam escapes when cooking.

Microwave on high for 6 minutes.


You can make a day or two ahead, store in fridge wrapped in cling film. Reheat in microwave for a minute or two, when you wish to consume.


Hot Butter Sauce

1/2 cup butter

1 cup sugar

1/2 cup cream

Melt butter, add sugar until dissolved.

Add cream, stir until warm. Store in fridge, reheat when desired. Pour over heated Cantley Pudding.
