Original from my Aunt Muriel, long long ago, calls for diced cucumber, peeled and diced fresh tomatoes, salt and pepper, olive oil, red wine vinegar, tomato juice, bell pepper, onion, and maybe some cumin if youre living large. She said serve it with chili con queso, avocado, etc.
Totally easy and I have not made it in years. But what a week it has been for Gazpacho Police jokes so I rummaged in my fridge and pantry and came up with:
Loaded Bloody Mary mix (from Costco) very spicy! Horseradish & all kinds of good stuff
Canned diced tomatoes
Baby bell peppers, the multicolored kind (happened to have a handful left)
Onion
Olive oil
Balsamic vinegar
No cukes I dont like them and hubby is allergic
Have to check if any of the little avos I have are ripe, so I can serve them on the side. One of our neighbors farms them, and kindly doesnt trim the branches at the fence line. Ive been picking them if they hang over the sidewalk, and have a big bowlful.
Empty-headed Green is a hateful damn fool, but I have to thank her for providing what will surely be an enduring hilarious meme, and for reminding me to dig thru my recipe box.

(90,667 posts)I was concerned that the canned tomatoes wouldnt be good enough, but they are.
Onward to dinner! I have tortillas and shredded cheese to fill out the meal.

(17,153 posts)And instead of Christmas, my friends and I do 'Dogmas' - we're not religious and are very much over consumerism and too much crap. We work out a menu earlier in the year and I cook it.
Coupla years ago we had Bloody Mary Gazpacho (followed by blackened swordfish). It was very more-ish!
