Am I missing something? (Cross-border vaccination mandates)

Isn't there DECADES of precedent allowing countries to set their own rules about who comes into their country and what needs to be done to obtain entry (including vaccinations)?

I was under the impression that vaccine mandates were the reason for the truck blockade at the U.S. Canadian border.

Also, why Djokovic couldn't play at the French Open.

Yes - generally it's settled law. But so what? (And sometimes the answer to the "so what?" question makes the bald question you posed more nuanced - or not even an applicable questions.)

And I specifically posted about mandates to cross borders. And there has been a huge story in the news about blockades at border crossings.

Like I said, I'm not a mind reader - until you tell me from what something might be missing, I can't help you. There are nearly always nuances ot every legal question, which depend on the details you didn't provide.
