He seems to think he's more important than he is. It would be a slap in the face if the committee decided they didn't need to hear from him.
I doubt he'd give them anything they don't already know, and he'd be sticking his middle finger up at the whole process anyway. Between pleading the 5th he'd just be spewing hate towards the committee.
So fuck him.

If these people aren't held accountable and their rhetoric muted, and if heaven forbid the GQP gets more power after mid-terms, Cheney and Raskin and the dozens of others perceived as their enemies are in grave danger. Bannon isn't joking. These people want public executions.
In addition to saving our democracy, all of the high-profile people known as enemies to Trumpism hopefully are really pushing for indictments because their lives are in danger. Hopefully they see it that way too because this isn't a joke even though Bannon and the others are easy to mock.
They're delusional and dangerous.

Early life and career
Jamin Ben Raskin[2] was born to a Jewish family in Washington, D.C. on December 13, 1962, to Barbara (née Bellman) Raskin and Marcus Raskin. First amendment not withstanding it seems to me he has been very aggressive and threatening. If prosecutors can ask for more jail time how much time and where is the line he would have to cross by making all his crazy accusations and threats.
Of course with our luck if he is found guilty hell only get 3 months for each count. He could handle that. Hed love being the martyr who didnt give in to the deep state and hed shoot his mouth off even more.
Please tell me more time could be tacked on!
