Why do I need a subject matter server? I don’t go to Twitter for JUST politics or JUST urban transportation or JUST cats.

You can pick a server with the standard app tool and just try it

Or you can follow someone to a server( I followed George Takei)

Or if you feel you want to find a special community you can follow suggestions like in the OP.

Keep in mind not all servers will have the same features and speed and good moderating.

Edit to add: Universeodon.com rocks so far

I've had no problem finding people on other instances and following them so they're added to my feed.
