I used to regularly go into Taft on a tanker, and during crawfish season we'd get 'em at the local gin mill for $1/lb. Lots of folks with "U"s and "X"s in their names there.

(23,864 posts)Granted, fried oysters, catfish and those other things are much higher on the list but, IMO, fried crawfish tails sneaks in under the radar inside poboys.

(2,500 posts)I love crawfish myself, but I like them boiled and that's how I would rather have them on a sandwich. I don't like shrimp poboys fried and that goes for crawfish too. That breading just detracts from the natural taste and adds calories on top of the spices that contain too much salt as is.
