Indians use tons of spices so it's purchased bagged in bulk quantities. Then you put it in jars of your choice for daily access.

And pro tip for Americans, lodge cast iron griddle pans are great for making dosa in the US if you don't want to buy Indian tawa griddles from an Indian grocery store. A carbon steel crepe pan also works very well. Rub it down with an onion before pouring the batter and nothing will stick.
