The biscuits, which are served at the 650 Cracker Barrel locations, have been traditionally baked fresh.
However, the higher-ups decided that it would be better to make them the day before and freeze them, then reheat them.
The results were biscuits that were "hard, rubbery, and like a rock," according to sources within the company.

There aren't any Cracker Barrel restaurants where I live. Sounds like I'm not missing anything.

(18,372 posts)Not enough customers that value the higher costs associated with making fresh biscuits, etc. and are too sensitive to price changes to be retained.
These businesses have to generate a certain ROI for their investors otherwise the capital goes elsewhere. Welcome to capitalism.

(11,364 posts)You can't reheat day old biscuits and have them taste the same. Southern people know, day old biscuits get sliced in half and toasted for breakfast, and then whatever's left goes in the freezer for dressing.
