"Have you ever been at a potluck dinner & somebody brought a vegetarian chili

and you're eating it and there's an asparagus spear and a snow pea and you're like… what the hell?" LOL

Isa (Post Punk Kitchen) the Vegan Cookbook Goddess has done a bunch of videos for us.

I'm not going post the recipe here cause I really just wanted DU'ers who might be interested to know she's done the videos.

Her recipes all work, are delicious and generally don't use exotic and expensive ingredients. It can help save you some money.

About the crock-pot with searing. Thank you,Kitty 2 !

Due to laziness or ill health (whichever) I often overlook a number of recipes that need to saute or sear ingredients prior to putting it in the crock-pot. I'll have to look for that one.

When I've sauteed some onions or such in a pan and then add wine or broth and scrape up all those goodies for a killer sauce, the effort is so worth it.

But I do love my crock-pots for a cooler kitchen and delicious flavors. This new kind, just makes them top-notch easy

but why call it "meaty"? It's the one thing that I don't understand about folks who don't eat meat - the need/desire/whatever to recreate meat in some other form.

My kid is vegetarian/vegan (depending on what month it is, I think) and he's constantly telling me about the cool new recipe he found that makes something that is "just like <insert meat dish>". They're tasty dishes - most of them - on their own, so I don't understand why they need to be related to meat at all.

I would happily eat this chili - and will definitely try it out soon (sans guac, which I despise), but I won't try to kid myself that lentils are a stand-in for meat!

On another note: I want that slow cooker. It looks like a cross between a crock pot and a pressure cooker and the sear function is the bomb!

if someone doesn't like meat, why would they want the texture of it or the mouth feel?

I'm confused. I think this may fall under the "accept what I cannot understand".

by using almond/rice milk or eating nut butter without eating nuts (sunflower seed or pumpkin seed butter).

With deep undertones of flavor. We are stuck with the limitations of our language.

In my experience there are vegans and vegetarians that want to replicate the taste of meat (and Chinese Buddhist are masters of this) but there are others who want a deeply satisfying plate of food that doesn't taste like meat.

I'm still a bit confused about the replication of taste, but I'll accept the need to describe something within the limits of the language and certainly the desire for a complexity of taste.

I hate the idea of killing animals for food so I hardly ever eat "real" meat. When I do, I try to make sure it is from animals that were treated and killed humanely.

I am mostly vegetarian but it is not because I don't like the taste or tetxture of meat. I don't seek out meat substitutes, but I don't mind them sometimes.

no big deal I can adapt my recipe... I used 7 kinds of bean. Cannili, pinto beans, dark kidney, red kidney, white bean, black beans, pink beans. I'd substitute refried for the lentiles as they will add body. I use a sweet BBQ sauce or one with some molasses or brown sugar and smoke. No cloves but I do used red, green, yellow. orange peppers along with a hot one.

I like color.

Thanks for bringing it to my attention, a heretic.... Sometimes I should take a break from the politics for sanity and BP sake. Much more pleasant reading recipes and cooking tips.

As to this thread, got some nice ideas for a vegan chili, a searing slow cooker, and a couple smiles. "Appliance porn....???"

I could make my chili, leave out the ground beef and add more beans.

It's basically the same chili recipe, minus the meat and with more beans. Who would put asparagus and snow peas in chili?
