I dug up 15 horseradish plants this fall to use in making some hot kraut but they dried out before I got to use them.

I have 40 some odd plants though. Actually WAYYYYY too much horseradish.

Better than Bacon

1/2 cup soy sauce
1 Tbsp. nutritional yeast flakes
1 Tbsp. maple syrup
1/2 Tbsp. liquid smoke
1/2 lb. extra-firm tofu

• Mix the soy sauce, yeast flakes, maple syrup and liquid smoke together in a shallow container. With a cheese slicer, shave the tofu into very thin slices. Marinate the tofu in the soy sauce mixture for 1 day or more.
• To cook, heat a lightly oiled, heavy frying pan over medium-high heat. When the pan is hot, fry the tofu slices until they are golden-brown and almost crispy on both sides, scraping underneath the slices as you turn them with a sturdy spatula. Turn several times during cooking and let cool in the pan; the slices will crisp up as they cool.

Years ago, like many post university 20-somethings, I shared a big house with several people. One was a sanctimonious, self-absorbed vegetarian who took every moment she could to "educate" us to the evils of eating meat. I ditched work one day and showed up at a local cafe, where lo and behold she was eating a BLT. I told her I wouldn't say anything, as long as she shut her mouth as well.

To this day, I call bacon "the devil's meat." Only the truly righteous can resist it's deliciousness.

I know of two who gave up their vegan/vegetarian diets for BACON. It was all too much for them. Smelling it. Watching others eat it in front of them.

It was in a moment of weakness, when bacon was being served, that each (at different times) gave up and gave in.

But don't have the fortitude to look for one. There are very many to choose from, each as horrifying as the next, and they tend to haunt me for some time after viewing.

So imagine please instead, a photo of a vast concrete building with small stalls each containing a single pig. The stall is inches larger than the pig itself, purposely sized so as to hold the animal immobile. It stands in place 24 hours a day, day after day, week after week. The pain and monotony drive the social animal to chew at its cage and its mouth and surrounding concrete is soaked in blood.

So that's the snapshot I'd like you to imagine. Then I'd like you to consider what kinds of effects that stress, pain and psychological torture might have on the tissue of that animal, the tissue that you are going to eat.

If you can do that and still enjoy your bacon slab you're made of much hardier stuff than I.

that the bacon you can't control yourself over is made from a child, and that the child suffers horribly after a short life lived in fear, inside of a cage? Because that's about the same thing. If you had to torture and kill the pig, which is a very smart and dog-like creature, yourself, you would see it completely differently. The "meat" industry relies on doing everything behind closed doors with almost zero transparency because by far most people would stop paying them to torture then kill innocent creatures even they had to face what is done and how it's done.

84. Here's how I do it

Put the following in a food processer:
1/3 cup of dijon mustard,
1/3 cup of olive oil,
1/4 cup of dry white wine
5 or 6 garlic cloves,
about a tablespoon of soy sauce,
a good dash of Worcestershire sauce,
freshly ground black pepper
a tablespoon of fresh rosemary (I sometimes add some thyme and or sage as well)

Trim the lamb well - there's usually a lot of fat. Process until smooth then marinate the lamb 6 or 8 hours (overnight is better). Save some marinade for basting.

Grill it over low to medium heat until it's about 140 - 145 degrees internal temp in the thick part. The thinner parts will be more well done, but some people like that. Give it a baste with the reserved marinade shortly before it's done.

Let me know how it comes out.

For the record, I respect the choice not to eat meat. I just haven't made that choice myself - aside from cutting my red meat consumption to about once a week, for health and environmental reasons.

have you tried strips of dog or cat yet? you might like it even better. Pigs are dogs too, as the video at link below demonstrates.

Statin drugs to control cholesterol are the most widely prescribed drugs! If your diet requires an antidote, that's a huge red flag. All dietary cholesterol comes from carrion and eggs/bodily fluids of animals.
