(14,733 posts)It's not yet a thing of the past, even as more brands are altering their formulas to become 'frozen dairy desserts', as they no longer fit the definition of 'ice cream'. I'm not a chocolate ice cream fan myself, though, so maybe I shouldn't have posted, I might get banned for my heretical non-appreciation...

(10,597 posts)I used to bake those 4-layer carrot cakes. My step-mother showed me how with her special recipe. Does anyone remember the father-son bake-offs that the cub scouts used to have (or may still have?) My husband with two of our young sons baked a giant (table-size) carrot cake in the shape of a carrot. Of course they won first prize. A Hummingbird cake is allot like a carrot cake. Yum! But I also LOVE chocolate ice cream.

What's interesting about this cake was it turned out bigger than I thought. The dimensions are 6 by 8-inches, and whether saying that or seeing it in print just isn't the same as having it finished on the counter in front of you
Plus, making it in one large sheet pan lets it bake and cool faster. It was completely cooled in less than half an hour! So, I'd say that might be the best way to make larger and shaped cakes. You don't have to frost each layer as much as on the outside, though you'd still have to do some figuring to determine how much frosting would be needed.
I've posted the recipe now if you want to see. It's not especially difficult, just time-consuming.
