I know I wouldn't recognize the majority of them.

Nor, am I much impressed with someone just for being famous. In fact, I can pretty much guarantee that I had to serve Dick Cheney, his service wouldn't be exemplary.

a job may not be worth much, but a place to live + my family are.

How much would you be willing to take for a place to live and feeding your family? Slavery, working 14 hours a day, 7 days a week or a job that will kill you in a few years? Lines have to be drawn sometimes.

of the service industry.

You are probably thinking in terms of low paying service jobs but many service industry jobs pay pretty well like accounting and law. In fact, any industry that doesn't produce or manufacture goods is a service industry.
