I'd never use a milk chocolate in a sauce for duck any more than I'd use dark chocolate in my Pot de Crème. To do so would be a sin against all humanity and nature.
They are each purposeful an equal in my mind.

(10,201 posts)Wife and I gather each evening in the living room, where we have tea and chocolate. Depending on my choice of tea, will determine my choice of chocolate to nibble on with it.
With lighter teas, like green, oolong, white, or herbals, I'd definitely go with a darker chocolate. While the reds, blacks, and tend to go better with milk chocolate.
It's sort of like the age old question. What wine goes with chicken? Red or white? Exactly... Both.

Avoid the big names (Godiva, Hershey, etc). Go for the small niche producers.

(63,221 posts)I used to go there when I lived in NYC and buy a little bag of my favorites and then just savor one or two a night. I can't find them anywhere else, just the bars. You have to order them through the website, which is kind of expensive.
I like milk chocolate too, but only if it's Swiss, Austrian, German or Belgian. However, I have been known to eat Hershey's kisses and nuggets in a pinch! Basically, I'll eat anything, but I do have preferences.

dark chocolate is a vegetable. it is good for you.

(3,041 posts)If you're referring to candy, I prefer dark chocolate. On the other hand, my fiance is milk chocolate so if you were referring to that, I would be well-advised to say I prefer milk chocolate (even though I have no real preference regarding skin color.)

(3,623 posts)However, I do prefer dark chocolate-covered things (nuts, fruit, etc.) as milk chocolate overwhelms the other flavors. Overall though, I can't tolerate the bitterness and the aftertaste of dark chocolate. Plus, I love Cadbury's!
