My understanding of this old saying, is the pot sees itself in the reflection, don't know how it evolved for both being black...

Proud cooks kept their copper kettles polished to a mirror finish ... so when we say "the pot calling the kettle black" ... it's a way of saying "the pot is seeing itself reflected", which is fitting to the expression's usage. (The pot would be cast, or "black" iron.)
