never even seen a turkey fryer in real life, much less seen one used. Do they always flame like that--or even often? If they are so dangerous, I wonder why people use them, or why they are even on the market at all.

Too much grease and dropping in a turkey into the grease and you get an overflow. A turkey between ten to twelve pounds is large enough and check to see how much oil will be displaced before firing up the burner and leave room for the rolling boil of the oil.

Now they have an oil less turkey fryer, they are wonderful. They are not good to cook a ham because the sugar tends to burn but are great to cook roasts, pork loins, chicken, etc. Have drilled a hole in corn on the cob and used the kabob holders to roast. Ribs are great also.
