That's the best apple pie recipe I've ever seen. Dough in the fridge overnight, cooking the apples and thickening with cornstarch, pre-baking the bottom layer. Wonderful!

What a delightful man that pastry chef is. His joy in his job just radiates from him.

I rather like it when the bottom crust of a fruit pie gets soft with the juices from the filling, so I probably wouldn’t pre-bake the bottom crust for very long.

But I’d sure like to taste that and see if he’s on to something! Maybe it’s a winner.

My fruit pie crust (not mine: grandma rose’s — you can find her recipes in the bookstore) uses orange juice instead of water. I think she explains why but I forget. Man it’s a good crust.
