step on the scale and take your measurement.

Step off the scale and stand there for at least 10 seconds.

Step back on the scale. I'll bet you the difference in readings is probably 0.5 pounds or so.

I guess it's because my scale is not the most precisely engineered thing in the world.

Strain guages and accelerometers can be tricky. If you have one of the typical $20-35 scales on the market, you probably can't expect accuracies better than 3-5%, and that might be generous.
