(37,927 posts)Mix leftover spaghetti with an egg or 2, place in a greased pan, with ricotta or cottage cheese as a binder & bake.

(9,946 posts)Made sauce with tomatillos, tomatoes, eggplant, multiple kinds of peppers from my garden. Also added garlic, sweet onion, mushrooms, black pepper. All chopped fine. Cooked in skillet on medium low heat until creamy smooth and much of moisture boiled away. .
Sliced eggplant thin, salted, and put between paper towel to draw out moisture.
Cook according to directions riccotta-spinach ravioli. Cool.
In a glass casserole add layer of sauce then ravioli then eggplant more sauce and layer of parmesan cheese. Repeat a second layer of all ingredients topped with parmesan. Bake. Yum.
In general I like baked left over pasta with sauce more than when fresh.

(6,530 posts)When I make spaghetti sauce, you could feed an army with it. I divide it up in freezer bags and put it in the freezer. All I have to do is boil water for the pasta. The sauce goes in the microwave.

(15,121 posts)Every weekend, we make a "what's in the fridge" pizza using a Chēbē pizza crust mix. One week we were lucky enough to have grilled veggies leftover. They were fabulous on pizza!

(15,121 posts)Next time you have extra salsa, use it as the sauce. Add sliced bell peppers, onions, jalapeño, maybe a chipotle pepper in adobo sauce, tomato, Mexican cheese blend. We like to add baby greens (kale, spinach, chard) on top ... and then add sliced avocado and a dollop of sour cream after it bakes. That was last weekend's flavor. You could cook up some burger and/or add black bean. I have never made 2 of the same and never made a bad one. Pizza is the best way to use up leftovers. I mean, does anyone NOT like pizza? We even made one with salmon, cream cheese, capers, onions, and mozzarella once and it was delicious.
