My favorite is "Carol Of The Bells," either sung acapella by a large choir, or the Mannheim Steamroller and Trans-Siberian Orchestra versions.

He’s Jewish and I’m an atheist, but, damn he does that song perfectly for my ears. Doesn’t overdo it or underdo it.
