I have no real reason to keep kosher, but I've found that with Pastrami, the 'old ways are the best'.

Warmed pastrami on rye bread (or pumpernickel) with mustard.

Can't improve on perfection.

Reuben was corned beef and a Rachel is with Pastrami instead. There are lots of 'NY' deli's in south Florida and that's what I was told. I always just ordered a Reuben with Pastrami instead. Whatever you call it, it's damn good though!

Go to Sarge's Deli, 538 3rd Ave., Manhattan. The pastrami is much better, and half the people in Katz's are just there to see the table where Meg Ryan faked an orgasm in "When Harry Met Sally."
