(68,449 posts)spaghettini with meatballs and tomato sauce. I also like rosa marina in soups (orzo will do if I can't get rosa marina, and in a pinch I will go with ancini di pepe).
I have never liked mac and cheese, and I hate macaroni salads.

1 lb rigatoni
1 28 oz. can of tomato puree
1 14 or 15 oz. can of diced tomatoes in juice
Salt and pepper to taste
1/2 cup shredded Parmesan cheese
Preheat oven to 400 degrees. Place uncooked pasta in a large bowl. Add oil and stir until well coated. Let stand for 20 minutes.
Add tomatoes to pasta mixture. Season with salt and pepper to taste. Stir to combine.
Transfer to a 2 1/2 quart baking dish. Cover with aluminum foil. Bake for 60 minutes, stirring 1/2 way through.
Remove from oven, sprinkle with cheese, and stir to incorporate. Serve immediately.

This has become one of my favorite dishes in our house, and never mind it's made with rigatoni because it works just as well with macaroni. But if you're being a stickler about macaroni, I'd have to say fried macaroni and cheese, Baby!

(14,796 posts)Just chopped-up whole canned (home canned or store-bought) tomatoes mixed with cooked macaroni and salt to taste. Best served hot, IMO.
Absolutely delicious and I could make a meal of it......
