For school lunch sandwiches! I never had one but I remember those who did have to eat them. Did I miss anything?

(16,990 posts)I wish I knew how she did it. I remember her adding crumbled bacon. She also made open face P&Cs and put them under the broiler until they were all melty and toasty. Every now and then I crave a P&C sandwich and I buy a tub of it at the deli but after one or two sandwiches I get tired of it.

I also enjoyed an occasional sandwich from the jar. I don't remember fixing it for the kids, but it is one of their favs as adults and they say they remember it from childhood. Go figure!

But it was better than the chicken hearts Flora brought for lunch in a ziplock baggie. When she popped those in her mouth!

(970 posts)I make homemade pimento cheese, and everyone seems to love it.
We especially like grilled pimento cheese sandwiches. Of course, I grate my own cheddar because it is tastier--not to mention stickier--than the weird, grated cheese that comes in a package which has a coating of a preservative which makes it so dry and unwieldy.
Also, nothing better than two thick slices of my homemade yeast bread with homemade pimento cheese topped by a thick slice of beefsteak tomato in season.....with a sprinkle of fresh black pepper and kosher salt. I am making myself hungry here.....
Nothing better.

(36,927 posts)When I grate cheese myself I add some cornstarch to it if I don't plan on using it right away. It keeps it from sticking together and it also helps to keep the cheese from separating when it melts. It does give it a bit of a dry texture.
The best thing about homemade pimento cheese is you can use better cheese and different varieties than store bought.

(24,259 posts)My parents were big bridge players and this was one of the things my mom would make up as a dip. It was one of my favorite treats when I was given crackers and a small custard cup with some in it.
She also got me into loving cream cheese and green olive (w/pimento) sandwiches since she'd make those and cut them into strips for a bridge party occasionally too.
Thanks for the memory jog. I think I'll pick up some pimentos and such and make up a recipe for that spread next time my granddaughters come for a visit. Then I can tell them the above story for fun.

Every picnic, church supper, and many school lunches included pimento cheese.
I didn't much like it as a kid but I got over that and I absolutely love the stuff!
Try Costco's jalapeno pimento cheese.
