(70,071 posts)the neck, the wing tips, and the guts go in the stock pot for the gravy, and some for the stuffing. tossed a few big dried shitakis in the pot.
cornbread stuffing, w some dried veggies from the garden, and mushroom gravy.
giblet gravy was mandatory in my mom's kitchen. i miss it.

(31,513 posts)the gravy and the neck is a wonderful treat for any pups in the house. The bones don't splinter like hollow bones do.

(86,515 posts)I make stock with the neck or cook it and give it to the carnivorous animals about. I can't digest organs so I don't even consider it. If I go to someone else's and they have giblets in the gravy or stuffing, I won't touch it.

(55,007 posts)plus onion and celery. celery and neck meat go in gravy (broth + pan drippings thickened with roux from flour and separated fat). heart and gizzard to to pets, liver can be fried by whoever can stand to eat it.
lots of meat on a turkey neck! I like "stuff" in my turkey gravy. if I really plan ahead, I roast the neck before simmering so it has some browning, but most of the time I don't have it thawed in time.
