My dad grew up in one and lived most of his life on the other, and i can tell you he went clamming MANY times. he had some pretty good recipes for clam fritters, baked clams...and Manhattan chowder!

The thing I don't like about most NE style chowders is that they are too thick. Not thick w/ ingredients, but the put tons of flour in them to thicken them up and it's just like a big bowl of glop. It's disgusting.

I love NE Clam Chowder if it's homemade by me or by someone who really knows what they are doing and only uses the freshest, purest ingredients - NO FLOUR EVER!

Grew up in CT and I never had a flour-based one till I left the region. I do like my chowder rich, so I use heavy cream and reduce it down, but flour is a big old no.

Thick w/ ingredients and a bit of cream, reduce until potatoes are soft and become part of the broth. Not entirely, just enough to give it a bit of heft. But I agree - no flour!

Sometimes I'll take it a bit thicker than I want and then add a slug of good witbier (I usually use Allagash White, sticking with the NE theme)

I grew up on the coast of NC. Our clam chowder is just the clams, clam broth, potatoes, onions, and spices. This style is sometimes called Chesapeake style.

but I like them both.

There's a seafood shack in Central MA that makes it's New England clam chowder w/o milk. They just use the clam broth.

I like that as well. I tend to prefer my soups brothy as opposed to thick. I hate gloppy soups or chowders that are thickened with tons of flour or slurry. Ugh!

In the summer--New England, as we always take 4 weeks off and hide out near the tip of Cape Cod.

In the winter, I usually have work in NYC. Not only does it give me a chance to see out daughter and her husband, but I get to grab a bowl or two of fresh hot Manhattan style clam chowder from the local delis.

How's THAT for the best of both worlds?

About 5 years ago, we invited our neighbors to a 10 day stay on Cape Cod. A well-off friend of ours had rented a fancy house in Truro, paid for it in advance, and then his son won a place in some athletic meet in Brisbane, Australia, so he was going to miss the first ten days of his Cape vacation. He asked us if we knew anyone who wanted to live in a nice fancy house in Truro for ten days. Our neighbor here in Germany works for a Japanese firm, so he had a gazillion miles on his account. He booked free round trips for himself and his wife on Lufthansa from Düsseldorf to Boston, and the only thing he had to pay for was his car rental. Cheap vacation to the USA! We invited them out to dinner, and decided to order clam chowder. They said "clam what?" They had never heard of it, had no idea what it was. Needless to say, fifteen minutes later, they were hooked!

I love both but if the Manhattan isn't creamy then it isn't good and I have many that seemed a bit watered down. New England holds up better to restaurant-style handling.
