chilled cucumber yogurt soup.
I had to wing it a bit and used what I had on hand. I used 4 mini (persian) cucumbers peeled and grated, juice of 1/2 a lemon, some olive oil, plain yogurt (5.3 oz size), salt, pepper, dill. Mixed it all together (no blender although you can blend it). chill. eat. yum yum
it really was delicious for a hot summer day. It's refreshing and filling and you can improvise.

(25,287 posts)Unfortunately, I don't have cucumbers and I'm limiting my shopping.
Although the Persian or seedless cucumbers are superior, we have always used whatever grew in the garden or what was cheapest in the grocery store.
Here is how they made it
Ingredients: Cucumber, yogurt and mint.
(This recipe says to add water, but for some reason Armenian yogurt is thicker than Dannon...no straining was ever involved.)

(21,863 posts)at the farmers market. Next time I am there (and who knows when that will be) I am going to buy them. Yes, mint would also be great. (As in the Armenian recipe - Jajik). There seem to be varieties on this recipe from different countries. When I eat Indian food I always get a side of raita which is also similar.
Also home grown cukes are probably awesome!!

(15,805 posts)The cucumbers, shallots, mint and dill are blended with tart Greek yogurt until smooth. Taste and add salt and pepper as needed. I chill it for several hours and serve with lemon wedges and Feta Cheese Toast.
The recipe uses a choice of added toppings from toasted walnut pieces, yellow raisins, chipped hard boiled eggs and pomegranate seeds.
This soup also doubles as a salad dressing served over a wedge of lettuce with tomatoes, cucumbers and radishes. I use any leftovers to make a nice meal, adding tuna or small cooked shrimp.

(21,863 posts)The walnuts sound like a great idea. When I was looking at recipes there was one that said to add raisins... it was the nytimes anthony zimern recipe. The feta toast!. Yum
Next time I'm shopping I will get all the proper ingredients. It's a very versatile recipe.

Yes! Thats another good cold soup. Very fresh and healthy and tasty. Definitely going on my summer menu ideas.

But chilled cucumber yogurt soup sounds great!
