I mow around patches of flowers in the lawn. Drives some folks crazier than we already are.

Dandelions are okay with me.

People see dandelions in their yard and say they have a jungle. I have Japanese knotweed and Chinese wisteria (and Japanese and American wisteria too). I have sawgrass, or whatever they call it. It shuts the mower down. I have a real jungle.

Dandelions are the least of my worry. I like them at this point, because they crowd out the harder to cut stuff, lol.

You can use fresh dandelion greens in salads where the slightly bitter taste adds a delicious flavor to plain lettuce. Also try it in pasta salads with a zesty Italian dressing.

Be sure to wash dandelion greens thoroughly. To freeze them, blanch for 60 seconds, drop into an ice water bath, drain and portion into freezer bags.

Dandelion greens are wonderful in hearty soups, just use it the same way as kale, chard or any other leafy greens. Dandelion greens pair really well in dried white bean soups to add flavor to the bland taste of the beans.

FREE FOOD! What's not to like?

Here in snow country, they're one of the first flowers to show up. Bees need their pollen for their larva to develop.

A few here and there...we get those ugly thistles..but I think I've had one or two thistles in the past 20 years.

Most of our weeds are winter weeds, except hackberries..(ugh) Most Texas natives trees are extremely deep rooted. Birds eat the berries, sit on fences and spawn millions of hackberries.
