But anyone who thinks turkey always tastes like cardboard, apparently has few or no taste buds working.

I'm reminded of nutritionists who swear you can always substitute no-fat yogurt for full-fat sour cream in a recipe and "you'll never notice the difference!" Maybe they won't, but I will.

Turkey is easy to make. Too many people only bake once a year, which is foolish. When my kids were growing up I'd sometimes bake a turkey in the middle of the week for dinner. I think they appreciated it.

I will agree that the wine is crucial.

I make a bee line for the legs...and prefer it afterward as sandwiches.

But....best part is making stock from the carcass and making a really spicy turkey tortilla soup.

and brine it overnight with kosher salt. I have not added wine before, but just may do it this year. What harm could it do?
