onto a flat, hot surface for a total of like 2 minutes and have fresh pancakes, so I just have to ask ... is that too involved for some reason?

My husband doesn't really like pancakes - he will eat them if I make them - and the one time in the last twenty years I made them one batch made like two dozen. Way too many for a two person household.

It worked out OK. We each had a few, then I froze the rest and could get out the small number I like at a time and nuke them whenever I wanted.

I'm not fond enough of pancakes to do it more than once every few months. I try to make them more nutritious by using some oat flour or buckwheat, plus ground up walnuts or pecans. I don't use syrup on them either. Instead, I heat up blueberries (or raspberries) with a little water and a pinch of sugar until they soften. Raspberries turn to mush, like a thin puree or thin jam. I mash the soft blueberries. (The fruit comes fresh from a farmer's market in season. I freeze it.)

Then I pour the fruit sauce over the pancakes and eat a heated, thin slice of ham with the pancakes for protein.

Having just been to the cardiologist, ham is off the table for now - too much salt. And I have several packets of sliced ham in the freezer. Not sure what I will do with that, probably eat it infrequently and in small amounts.

I like frozen buttermilk waffles hot from the toaster oven, myself. With no syrup or anything. They're like toaster biscuits.

In the microwave for a few seconds, spread butter on top, and then some syrup. Quite good, actually.

This was back before microwave ovens were common! Yeah, I'm old.

They were excellent after I'd thawed them in the toaster.

I would eat them rolled up with a little butter and jam. Omigod. So Good!

(and doesn't leave a cold spot in the middle), they are fine in a pinch. Especially if you have a quick craving.

Not as good as pancakes made on the spot (so long as the cook is competent), but pretty good nonetheless. I 've never had a problem with them being cold in the middle. If they turn out that way, heat them longer.

When I was in college, Mom considered one of the essentials to be an iron. Since I didn't wear anything that needed ironing, I used it to cook grilled cheese sandwiches with. Make the sandwich, wrap in foil, Put the iron on one side for a while, turn over, repeat. I don't remember the setting or the timing since that was fifty years ago, but it made a good sandwich.

My other cooking tools were an electric skillet (Goodwill), a toaster oven (Goodwill), and a popcorn popper (Christmas present). My second year of college I made my Thanksgiving dinner with those - Cornish game hen in the toaster over with stuffing, vegetables in the skillet, heated rolls with the iron. No dessert.

with powdered sugar.

Here's what I do. I toast them and schmeer on a really good yoghurt (I like coconut best), the I top them with peach slices and pour a little bit of the nectar on top. If I had powdered sugar I'd use it, might be good come to think about it.

Damn, that's good eatin'.
