been a tasty crinkle fry. The only potato that tastes worse is the vile steak fry. The center is never the right consistency in a steak fry or crinkle fry.

The ratio of crispy edge to center is the key to fry taste.

It is extremely rare, because nearly all the places that use them just thaw, fry and throw the bland things on a plate. Properly made and seasoned, they are good. I was actually surprised to find that out the first time I had good ones at some diner.

We (Huntsville, Al.) have a local chicken chain called Tenders. They can make them properly. I believe the key is to have the oil very hot, so that the surface sears immediately and the fry doesn't soak up any oil. I've never had a bad french fry made there. Steak fries, or potato wedges as Publix sells, are even more difficult to get right. The margin for error on those is very fine.

But the latter at least look like home-fry chips, kind of. Curly just don't look right at all....
