89. Well -- dairy and nuts -- ghee and pistachios. I had bessan barfi, sometime called chickpea "fudge".

It reminded me more of Southern-style pecan pralines, without the pecans. Bessan is flour made from dried chickpeas. You combine it with ghee, butter, or even vegetable oil, and gently saute it until it browns a little. Then you boil down some sugar syrup to about 230 degrees and combine the two mixtures. The "fudge" sets in about 20 mins. Top with crushed/chopped pistachios. It's very sugary, and addictive.

Lots of variations on the basic recipe online.
