...and it was absolutely magnificent.
Basically, all you need to do is get a skillet, pour in a liberal base of olive oil, and heat it up. On the side you crack an egg, but don't actually put the egg in until the oil is hot enough. Then you pour the egg in, reduce the heat slightly, and let it fry in the oil for about a minute and a half while spooning the oil over the egg itself. (If you're so skilled, you can attempt to flip the egg over easy in the process)
Then you scoop the egg out of the pan and it's good to go with a little salt and pepper. The whites will be perfectly brown and crispy, but not burnt, and the yolk is well preserved in the middle.
Didn't know this method existed until Chef Jose Andres--a national and worldwide treasure and future Nobel recipient and overall terrific human being--mentioned it online and caught my interest. I was nervous I would screw it up, but it turned out perfectly.
