Belgian endive, radicchio, iceberg heart, tri-color carrot, shallots, mozzarella, toasted walnut, Juici red apples w/bleu cheese vinaigrette. Wish I'd have some other soft cheese like ... bleu ... but was out.

(33,643 posts)Would've REALLY been good with some bleu cheese crumbles but this a 'using what I had on hand' kinda deal
Thanks, btw

(12,463 posts)I live alone.
Sometimes I make the good stuff in batches.
Most recently I made some red curry with chicken and vegetables over job's tears.
It kicked my ass I blended the flavors well, added a bit of siracha to turn up the heat .
So yeah sometimes I cook fancy dinners for myself. Most the time though ,I eat it as lunch because I dont want to go to bed with a full stomach.
Another cheese similar to blue cheese is gorgonzola. Its a green cheese and I think its better by far than blue cheese.
I love good cheese.

Made your own curry huh? You go whole hog with getting keffir lime leaves and fresh galanga root and birdseye chili and grind it all yourself?

(12,463 posts)Lately getting the lime leaves is a pain in the ass. Sucks.
I have a curry cookbook I got at a yard sale,it has recipies for all kinds of curries from scratch ,indian and thai dishes. Side dishes ,Tom yum soup, mulligetawny soup.
I adore that book.

(1,241 posts)Pasta with onions, garlic, kalamata olives, sundried tomatoes and parmesan cheese.
When I want something different other than pasta with tomato sauce,
I make this recipe.
Sauté thinly sliced onions in olive oil until almost caramelized.
Add chopped garlic, butter, and lightly sauté.
Mix in sliced kalamata olives and sundried tomatoes.
Add all of this to cooked pasta with lots and lots of grated cheese!
ENJOY!
Note: The amount of onions, garlic, olives and sundried tomatoes is your choice.
