(29,727 posts)and I apply that axiom quite frequently in everyday life. Ill try to restrict my pick to dishes where the cheese is the star.
Im also fond of casseroles of all sorts, so my favorite is probably one of those.
Keeping cheese in the starting role, Im thinking of a nice 4-cheese and spinach baked with pasta topped with fresh tomatoes added a few minutes before removing from oven. The symphony of herbs and spices is still negotiable as of now.

(25,048 posts)I first had this in the Swiss Alps. Potatoes and cornichons along with white wine. Fabulous.
There used to be a restaurant near NYCs Lincoln Center called the Monks Inn that served this with the fire and cheese wheel right next to your table. Sadly, its long gone.
I also had it at a little rustic spot in Beacon, NY otherwise Ive never see it in the States.

I really do like a good cheese fondue, too.

However as mentioned I had home made Fondue at their friend's house. First time!
And one if our many food mini vendor set ups pre Covid I had raclette shaved onto bread. Yum!

(11,850 posts)I place about roughly a 3/4 cup of shredded mozzarella cheese with a tablespoon of parmesan cheese and mix it up in a bowl.
I turn on the stovetop to heat up a coated non-stick pan on low heat. I place about half of the mixture in the pan and wait for the bottom to turn brown. I flip it over like a pancake and flatten it out a bit with a pancake turner.
My inside ingredients varies, my usual inside ingredients are marinara sauce and sliced kosher pickles. Sometimes, it's marinara sauce and pepperoni.
After adding the inside ingredients, I fold it in half and flip it over on both sides to make sure the cheese is melting.
I haven't perfected this as of yet, so I haven't put the recipe into the weight loss group yet. It's very low carb and gluten free. Two of these are extremely filling.

There was a cheese shop on Chambers St west of West Broadway - where I first discovered sharp cheddar w garlic!

I had a cheese and fruit platter. Maybe Welsh rarebit another time.
I would take friends there; with the same sketchy reaction I had going up those stairs, and surprise!

(18,567 posts)My "favorite cheese dish" depends on what you mean by "favorite." The greatest cheese dish I ever had was Souffle Suissesse by Michel Roux Jr. at Le Gavroche in London. But for common, mundane purposes, my favorite dish that includes cheese as a staple is a form of tuna casserole made in my family that uses rice, Cheez Whiz, olives, and tuna. Yeah, I know, people shudder at the name "tuna casserole," but this one is not that one.
