I use an under the breast skin herb mixture.....garlic, salt, pepper, lemon zest, fresh tyme and herbs of Provence in "duck fat". Stuff the cavity with 1/2 lemons, onions, fresh tyme.... then top the outside of chicken with duck fat herb mixture...then roast in oven...

Whole Foods carries it in a jar and also in the cooler section...I prefer the cooler section packed duck fat...it's more like a Crisco style. We here in Dayton Ohio also have a specialty store called Dorothy Lanes Market that also carries the duck fat.

I do not particularly enjoy cooking but when my kids were young and we had our 2 families and eventually friends who were missing someone or did not want to go to the work for just the 2 of them and families of my boys best friend it all added up.

I would do for 16-20 people for mid day dinner then an evening of goodies and sandwiches and more stuffing etc.

Sometimes 2 days in a row. I can whip that kind of meal together in a couple of days of planning and cooking.

Every day food you can get it yourself. Just me and my husband now and my regular cooking days are over.

The Shepards Pie ( I call it cottage Pie) take more time than sloppy joes, but worth it!

and it's the short fast way...I just open a can of beans and add it to simmering olive oil w/ garlic (sometimes onion). Meanwhile rice is in the cooker with whatever spare veggies and garlic I can find. Voila' and yum.

I am single so one can lasts at least a couple of meals. I work more than full-time so meals at home are quick deals: I love to make tortillas, omelets, spaghetti, and a couple of spoons of the beans adds protein and flavor to any dish! I refrigerate leftover beans for the next meal. But I only use olive oil, garlic and at times onion (if I don't go to work my shift for at least a day! I love onions but onions don't love me!) My favorite is rice & beans, but rice takes time since it is a separate cooking moment. To rice, I add the Mediterranean spices: olive oil, garlic, onion, tomatoes. To elaborate on the rice I may add either shrimp or extra veggies: carrots, peas, broccoli, cauliflower, and/or spinach.

Kind of depends on what I feel like cooking at any given time.

A dish I claim to have invented and lived on in college because you can alter some ingredients is spinach stroganoff. The recipe is for one to two servings.

In ten to twelve inch skillet, saute in butter & olive oil, 1/2 onion - sliced wedges, 5-8 med mushrooms sliced, 5-7 sliced green olives, 1/4 tsp cracked pepper, pinch of basil or five fresh leaves cut up.

When onions are nearly translucent all through, add a big fistful of fresh spinach, cook until wilted. Add 1/2 C wine of your choice, I use a cheap Pinot Gris, add a healthy pinch of ground coriander, cook until liquid is reduced by half, add 1-2 cloves fresh garlic cut into chunks you can stab with a fork and remove from heat.

Mix in 1/2 Cup sour cream or yogurt, salt to taste serve over angel hair pasta or whatever.

I like a little shaved parm on top.

Sometimes I add leftover chicken and brown that a little before adding the spinach.

I make other stuff really well but I own that one.

You should try it, you will discover what works for your tastes by altering thing, even the spinach part, sometimes I had cherry tomatoes with the wine or..?

It's my go to when I have no imagination or money. It's a cheap meal if you make it often.

Takes about 20mins. I survived on it through college and still eat it often when I can't think of anything else.

You definitely want to add the garlic last so that all you are doing is warming up the oils in the pieces. It's a great zing in the variety of flavors.

Other than that, my husband bakes amazing pies, and also does most of the cooking. He’s a really good cook, so I’m okay with that.

I do enjoy baking, so I do most of that. We make a pretty good team since 1975.
Spaghetti dinner in my near future, I’m thinking.

Which is particular chicken soup.

Chicken of Muchness

2 chicken leg quarters
3 or 4 carrots
2 cans of diced or crushed tomatoes
1 medium onion
1 small green pepper
3 or 4 cups of chicken broth
3 bay leaves
3 cinnamon sticks
½ to ¾ tsp each of celery salt, marjoram, thyme, basil, and tarragon
olive oil
2 Tablespoons butter
2 Tablespoons flour

Bring the chicken to a boil with just enough water to cover. Turn heat down to simmer and skim off scum and fat that comes to the surface. This will take ten to fifteen minutes.

Once skimming is done, put the bay leaves, peeled carrots, and cinnamon sticks in pot with chicken, cover and let simmer for an hour.

Remove carrots and chicken. Let them cool while you sauté the sliced onion and green pepper in a little olive oil. You want them to get a little brown. Put in soup pot. Add the tomatoes.

Make a roux with the butter and flour in that same pan, then add a cup or two of broth. Stir and let it thicken over the heat until it seems thick enough. Pour into pot.

Cut up the carrots, strip the chicken from the bones and return to soup pot. Now add the other seasonings. You will probably need to add more chicken broth to have the right amount of liquid.

Cover and simmer for an hour or so.

Make rice, which takes about 20 minutes, when you’re ready to eat. Put rice in a bowl, then add the chicken of muchness. Ground pepper and some salt and enjoy!

The trick is to bake it first then broil at the end without ever taking your eyes off
