Maybe my taste buds are not refined but I swear that Giant brand mayonnaise actually is Hellmans, like many store brands are the real thing in a different package.

(7,671 posts)Hellman's seems to offer more varieties, such as olive oil, light, etc. At least that is the case where I shop.
On the other hand, Mom raised us on Kraft Miracle Whip, so what do I know??

(9,365 posts)I'm in the past of the countr where one can see both Best Foods and Hellman's West of us it's all Best Foods, east of us Hellman's. Same prudoct, same maker.

(26,301 posts)I grew up on Miracle Whip. Used to buy Smart Balance mayo but sometimes it is hard to find in local grocery stores, so one time when I couldn't get it, I tried Hellman's olive oil mayo. Now it's the only one that I buy.

(6,505 posts)Will be having a tomato sandwich with Dukes for lunch. I find Hellmans to be too sweet. Miracle Whip is not even mayonnaise.
(It has less vegetable oil than is legally required to be called Mayo, and it has added sugar.)

1 pasteurized egg at room temperature
1 tablespoon lemon juice
1/2 teaspoon salt
1 cup light-flavored oil
Install your Whisk beater.
Step 1 is to put the egg, salt and lemon juice in the mixer. You MUST use the lemon juice as it stabilizes the emulsion.
Step 2 is to set the mixer to low and beat until the ingredients are thoroughly mixed.
Step 3 is most crucial: add the oil drop by drop until half of it's in, beating it in thoroughly after every drop. At halfway through add it in a very slow stream. Adding the oil too fast is a sure way of getting a mess rather than mayonnaise.
If you want to add pepper, mustard or whatever, do that in Step 1.
