(OK, it's not like the ice cream includes green bean casserole, giblets, and frozen congealed gravy, they did put some fetters on their creatively. It would probably be not horrible)

(12,002 posts)I once made Emerils recipe. You make mushroom soup from scratch. Use fresh green beans, and french them by hand. thinly slice shallots, dredge in flour and shallow fry them.
It took about two hours to put together, and was delicious, but not nearly worth the effort.

(17,821 posts)but I could eat it more often. I usually just make it with green beans, cream of mushroom soup, and the French onions on top. I've put cheddar cheese in it a couple of times and sometimes I even put ground beef in it. There's a variety of ways to do it.

I have one kind of green beans that I make with basil pesto, Parmesan and pine nuts.
The other has sauteed shallots, mustard and a bit of sour cream.

(5,457 posts)bean casserole will not be one of them. It is my S-I-L's turn to do the turkey. Neither of us might have to cook because my son and his wife want to have it catered this year. I doubt that will happen though since my son rented a huge cabin in the middle of the mountains in a very sparsely populated part of Central Pa. I just can't picture there being a catering place anywhere within 30 miles of there. LOL. I will just sit back and see what flies and what plops and then react accordingly.

(599 posts)If the cook would be offended by my not eating it, I would have a spoon and lie about how good it is. If no one is looking, I will skip the green beans and have an extra helping of mashed potatoes and gravy, candied yams, and cranberry sauce. Sometimes it is better to eat something you don't like and spare the cook's feelings than to pig out on the good stuff.

(130,537 posts)if it's served as part of a Thanksgiving dinner - which are the only occasions when I've encountered it - I'll eat it. The one Thanksgiving dish I will not eat is that awful sweet potato goop with melted marshmallows. One time my SIL accidentally set that stuff on fire, which I though was an improvement.

(23,175 posts)I roast green beans. When they are cooked, I turn off the oven, top the beans with french-fried onions and put the pan back in the oven for about 10 minutes. Really tasty side, lower carbs, too.
I had fresh mushrooms last week, so I added raw onions and mushrooms to the beans and roasted all of it, then added the f-f onions.

Ingredients
3 slices thick-cut bacon, diced
½ cup finely chopped yellow onion
2 cloves garlic, minced
12 ounces fresh button or cremini mushrooms, chopped
3 tablespoons butter
3 tablespoons all-purpose flour
1 cup half-and-half
1 cup chicken broth
½ cup shredded white cheddar cheese
¾ teaspoon salt
¼ teaspoon freshly ground black pepper
1 pound fresh green beans, trimmed, halved, and blanched (boil 5 minutes, place beans in ice water for a couple of minutes, drain)
1 can French fried onions


Instructions
1 Preheat the oven to 350 degrees F.
2 Fry the bacon in a large skillet over medium-high heat until crispy. Add the onions and cook until soft and translucent, about 4-5 minutes. Add the mushrooms and garlic and cook for another 4-5 minutes until the mushrooms are soft. Transfer the mixture to a bowl.
3 Melt the butter in the same skillet and whisk in the flour. Once combined, continue whisking for another 2 minutes until the mixture has slightly deepened in color. Add the half-and-half and chicken broth while constantly whisking to prevent lumps. Once slightly thickened, add the cheese and whisk until melted and combined.
4 Next add the mushroom/bacon mixture along with the salt and pepper. Let the sauce simmer for a couple of minutes, then add the green beans. Stir to combine.
5 Pour the bean mixture into a 9x13 casserole dish and sprinkle the French fried onions all over the top. Bake uncovered for 30 minutes.
Notes
Preparing in Advance: Everything can be done in advance except for adding the crispy onions, otherwise they'll get soggy. Add those just before baking. Also, let the casserole sit for at least 30 minutes after removing it from the fridge before baking.
