(26,436 posts)Better yet, though, is a cranapple pie. I discovered that gem one day when I wanted to make an apple pie, but did not have enough apples to fill it up as much as I like to. I had some fresh cranberries on hand, so I added them to the apples, with more sugar since cranberries are so tart. My husband liked it enough to request it again from time to time.

(14,307 posts)Never, ever canned. Dried cranberries are wonderful in baking and salads. Bright flavor and color are perfect. Fresh-cooked sauces and relish options are endless. Cranberry-pear chutney is wonderful with curried dishes (like leftover turkey curry) and fresh cooked sauces can be made thick enough to slather on sandwiches, too. No additives (except for orange zest and perhaps a hit of brandy, and of course organic sugar and sea salt).

(14,307 posts)Dried cranberries do "pimp out" recipes! You mentioned oat cookies and I hear you--yum, but I also throw them in oatmeal, and cinnamon buns along with orange zest and lots of cinnamon.

I use fresh, whole berries, an1/2 an orange w/rind (per bag of berries) and run that through the processor, add sweetener to taste and a dash of brandy. Let it cure for at least an hour before serving.

Depending on whether you use a blender or a full on food processor, it can require some help in the making as it tends to cake up on the sides of the vessel so you have to stop and push it into the middle. I do it using pulse mode manually so I can let it fall inward on its own and I use a Magic Bullet, the large blender urn, it work without the need to "help" it.
The only kind of jellied stuff of that sort that I use anymore is quince paste or guava paste in sandwiches.

Now for the last three years - I've made Thanksgiving Dinner - the whole traditional spread. Three years ago I found a recipe - utilizing whole fresh cranberries and I made them from scratch.
It turned out that they were the hit of the dining experience. So now for the last three years and this year again - I will make them from scratch using whole fresh cranberries.

(131,196 posts)When I was a kid I liked the canned cranberry sauce because when you turned the can over into a dish the sauce would come out with a *bloop* sound and you could see the ridge imprints from the can. For some reason I thought that was cool.

It looks like a mistake - but ya gotta try it once
(okay, made a half recipe to try)
however -- tradition dictates the Jellied ridged cylinder always appears on our table.
In case you're curious:
Mama Stamberg's cranberry relish
2 cups raw cranberries washed
1 small onion
½ cup sugar
¾ cup sour cream
2 T. horseradish.
Grind the cranberries and onion together (I use an old-fashioned meat grinder, but you can use a processor just keep pieces chunky). Add everything else. Mix. Put in a container and freeze. On Thanksgiving morning, move the relish from the freezer to the refrigerator compartment, to thaw. It will be thick, creamy, chunky, and shocking pink*. Makes 1 and ½ pints.

(1,862 posts)I buy several bags before the holidays and freeze what Im not using for Tgiving. I just take them out of the freezer, rinse and they are ready to get made into sauce.
I have a few different recipes but generally just follow the directions on the package except for the amount of sugar. I use about 1/4 of what their recipe calls for.

super easy.
The recipe is on the backside of the bag in most brands:
1 bag of fresh cranberries
1/2 to 1 whole orange
Sugar to taste
Throw it all in the food processor and buzz it to the desired consistency - voila!
I put orange flavored dried cranberries in our stuffing recipe.

(5,409 posts)My ex's Nana made the tastiest fresh cranberry relish and I miss it. It had orange zest and chopped walnuts (I think?) and however she seasoned it was perfect-sweet yet still a little tart. So good on turkey sandwiches!

(11,925 posts)Last year, I added a little orange liquor - that was good. There was one year I managed to find a Buda's hand citron - very nice.
If you can get a quince, they're another welcome addition.
I usually use juice concentrate for my cooking liquid: apple or orange, but any 100% juice concentrate will do.
