(23,694 posts)that I found in one of my Weight Watchers cookbooks.
Onions, garlic, jamaican jerk spices, beef broth, diced tomatoes, cut up sweet potatoes. Let it all cook until the potatoes are starting to get tender, then add a pound (or so) of fresh green beans and cook until the beans are done.
I add Kirkland canned roast beef rather than buy a big expensive hunk of what used to be affordable meat.
This can be made vegetarian with vegetable broth, black beans (or whatever you like) instead of beef.
I can not believe I like this dish so much!

(130,516 posts)I'll probably have to pass on this, too. Sweet potatoes are in the same class with Brussels sprouts - there is no recipe containing these nasty things that will make me consider them edible, especially if that recipe also involves onions and/or garlic. But thanks for the offer.

(132,427 posts)Parboil sweet potatoes. Cool, peel , cut into slices, Layer in buttered ovenproof dish. Add butter, brown sugar, and bourbon to taste. Cover, bake at 350 for 30-40 minutes.

My son, ever the calm, rational one, grabbed the flaming dish and walked calmly to the garage and shut the door and let it burn on the concrete. His sister (my daughter) and I were laughing and my wife, his girlfriend, and the girlfriend's family weren't quite sure what to make of what happened.
They're planning to host all of us again, sans casserole.

(6,501 posts)Most people use canned pumpkin in their pies. Almost all of it is not pumpkin, but rather a related member of the gourd family.
Won't get into the sweet potato vs yam wars. I prefer sweet potato pie with sweet potatoes not yams.

(130,516 posts)It was not very successful; it was kind of stringy and tasted like squash (which pumpkins are, technically). It was then that I learned that canned pumpkin for pies is made of sugar pumpkins, a small round winter squash, and not field pumpkins.

sweet potato pie and use pumpkin pie spices. Tastes the same as pumpkin pie but the texture is much thicker and more nutritious

(2,843 posts).......that sort of drive me crazy on DU. There are very few "yams" sold in the USA, mostly as a specialty item in the deep South. Canned yams are really sweet potatoes. Yellow sweet potatoes and orange "yams" in the produce department are both really sweet potatoes.

Canned pumpkin puree is technically Dickinson Squash puree, that they have chosen to call Dickinson Pumpkin puree, because a pumpkin is a squash, so why can't a squash be a pumpkin, the logic goes.

We made two different kinds of pie at Thanksgiving a few years back, for a large gathering. Some were made with "pumpkin" and others with pureed sweet potatoes. The spice mixture was from Penzey's and had ginger, cinnamon,nutmeg,clove and allspice.
Folks either found no or very little difference in them. Those that could discern a difference were split on which one might be the pumpkin.

Im so-so on pumpkin pie. Can take it or leave it. I made a killer pumpkin cheesecake one year.
However i love baked sweet potatoes, just plain. No gooey marshmallow topped casserole, please.

(40,969 posts)I like yams, although I've never had a pie with them, but baked with maple syrup, yum! Sweet potatoes just don't have the same soft texture & rich flavor, IMO. One year I added diced yams to my stuffing & I loved it but hubby not so much.
I could live on pecan pie & tacos. I made a pecan pie with maple syrup earlier this year after reading a comment in a recipe & it was to die for delicious. I'll do it again for T-day & may even get my rolling pin out & make a homemade butter crust for the occasion.

magazine that adds rum to the pie filling - really good. The recipe says 2 TBSP, which I initially did, and then, a few years ago, I upped it to 4 TBSP - even better.
I like sweet potato fries.

However, my preference would be pecan pie or a good cherry pie. I love a good pie!!! Buttermilk, chess, lemon, key lime, coconut cream, chocolate cream, and more.
OR the king of them all Peach Cobbler!!!
I am not very good with the piecrust part, though.
